Chicken Pepper Soup

CHICKEN PEPPER SOUP
Recipe for four to five servings

REQUIREMENTS

- 1.5kg whole chicken, cut into serving chunks
- 2 litres water or chicken stock
- 50g chopped fresh scotch bonnet chillies
- 100g pepper soup spices
- 1 onion, chopped
- chopped saint leaves - 1 clove garlic, crushed

Wash the chicken, cut into serving chunks and add some water. Add the chopped onion, chillies and crushed garlic and boil till tender.

Add a little stock, bring to the boil and simmer for 30 minutes, until the chicken is cooked. Add the pepper soup seasonings and cook for a further 30 minutes until the chicken is tender (add more stock if needed). and add chopped saint leaves

Season to taste and serve hot in soup bowls.
