Catfish Pepper Soup

CATFISH PEPPER SOUP
Recipe for four to five servings

REQUIREMENTS

- 4 medium size catfish
- 1 lime
- 50g pepper soup seasoning
- 50g chillies, grounded
- 100g fresh prawns
- 2 pints water or stock
- 25g mint leaves or saint leave chopped

What you do

Have the fishmonger kill and clean fish. Slice into 8 pieces. Wash the fish thoroughly with lime to remove any slime; season with salt.

Cover and leave in a cool place until required. Pour the stock into a clean pot and add chopped onions, chillies and pepper soup seasoning. Bring to the boil and boil rapidly for 15 minutes to blend flavours together. Add the seasoned fish and peeled fresh prawns and simmer gently for 20 minutes. Check seasoning and serve garnished with chopped mint leaves or saint leave. Serve with chilled juice.
