COCONUT RICE
Recipe for seven servings

REQUIREMENTS

- 4 cups of rice
- 2 medium Coconut or 1 litre coconut milk
- 1 tin of sardine fish
- 2 teaspoons ground dry pepper/chillies
- 2 teaspoons ground crayfish
- 1kg chicken
- 2 onion (sliced)
- 2 seasoning cubes
- Salt to taste

What you do

Wash the chicken, add onion, salt, 1 tsp pepper and seasoning cook until tender and set aside.

Break the coconut, extract the nut, wash and grind, add water to the paste and strain the coconut milk and pour in a large pot. Bring to boil, add washed rice and salt, allow to cook for 15minutes. Sprinkle in the ground crayfish, onion, remaining dry pepper, tinned fish and then add the cooked chicken and stock.

Do not stir to avoid burning. Cover and cook gently until all the liquid is well absorbed.

When rice is done and the all the liquid is dry, give it a good stir and remove from heat
