Quick Indonesian Fried Rice

Rice! Rice! Rice! We all love rice but having to eat same meal with the same flavour is where the issue lies. This Indonesia recipe of ours will take your taste buds out of the ordinary, and guess what? Every spoon leaves you with an excitement. Wow!
REQUIREMENTS

- 2 cups Thai jasmine rice 
- 2 pcs eggs 
- 2 tsp olive oil 
- 2 tbsp vegetable oil 
- 1 pc ginger 
- 3 pcs garlic
- 3 tsp hot chilli sauce
- 1 tsp black pepper 
- 1 tbsp fish sauce 
- 1 tbsp dark soy sauce 
- 3 pcs spring onions 
- 2 pcs chicken (boneless)
- 24 pcs shrimps 
- 1 pc onions 
- 4 cups water 
- 1 tsp salt 
What you do


Chop the onions, spring onions and mince the garlic, then set them aside.Also, Peel and devein the prawns and grate the ginger and set them aside.
Boil the rice in water or in a water-broth combination until cooked. Rinse and drain, then spread out on a baking sheet to cool. It is preferable to cook the rice 2 hours before or a day before and chill in a refrigerator.
Whisk the egg, olive oil and half of the salt in a small bowl. Make 2 thin omelettes in a small frying pan, cut into strips and set aside.
Heat the vegetable oil in a large saucepan over medium heat. Add the onions, ginger, garlic and pepper and stir-fry for about 2 minutes. Add the chicken (cut into tiny chunks) and shrimps and stir-fry for about 3 minutes or until the chicken is no longer pink.
Add the cooked rice and continue to stir-fry for about 3 minutes. Add the chilli paste, soy sauce and fish sauce and stir for about 2 minutes.
Remove from heat.
Serve and top with the omelette strips, spring onions and freshly chopped cilantro (optional).
