PUFF PUFF
Recipe for five servings

REQUIREMENTS

- 100g/ 2 cups Sugar
- 250g / 5 cups Flour
- 2 teaspoons/70g dry yeast
- 150ml warm water
- 1 litre Vegetable oil
- salt

What you do

Sift flour into a clean bowl, mix yeast in warm water and pour inside floor,add sugar mix all together until the batter is smooth.It can't be too hard or too soft.

Cover and leave in a warm place for 1 to 3 hours. After the dough has doubled in size it is ready to fry.

Pour vegetable oil into a deep frying pan, until it is at least 2 inches (or about 5 centimeters) high (too little will result in flatter balls).

Test to make sure the oil is hot enough by putting a 'drop' of batter into the oil. If it is not hot enough, the batter will stay at the bottom of the pot rather than rising to the top.

When the oil is hot enough, Scoop a little at a time in the hollow of your fingers and fry. Fry for a few minutes until the bottom side is golden brown.Turn the ball over and fry for a few more minutes until the other side is golden brown.

Drain puff puffs on paper towels or napkins right away to soak up some of the excess oil and serve warm.
