YAM BALLS
Recipe for few servings

REQUIREMENTS

- 1kg tuber yam
- 1 large onion, finely chopped
- 3 fresh tomatoes, peeled and - finely diced
- 1 tsp cayenne pepper
- 500ml vegetable oil
- 1/2 teaspoon dried thyme
- 1 teaspoon curry
- salt to taste
- 3 eggs, beaten
- 50g flour
- 250g butter
- Bread crumbs
- 2 maggi cubes

What you do

Peel the yam and cut into smaller pieces like in pottage. put inside a pot add moderate amount of water,pepper, maggi cubes, salt, chopped onion, thyme, curry and butter.

Stir the contents thoroughly, cover and allow to cook until the yam is soft and the water has almost dried up.

Mash the cooked yam until smooth and then remove from heat.

On a floured surface mould the mashed yam into balls and tip into a bowl of beaten eggs and into bread crumbs.

Heat the oil in a wok and deep fry the yam balls until golden brown. Drain on kitchen paper, garnish with quartered hard-boiled eggs and serve.
