EBATU SOUP

REQUIREMENTS

- 6 large size Garden Egg(white type)
- 2 medium size Shawa
- 1 small bunch Ewedu Leaves
- 10 small size Native Pepper(green)
- 3 Broad Leaves(moin moin leaves)
- 2 cooking spoons Palm Oil
- 2 Maggi cubes
- 2 litres Water
- Salt to taste



What you do

Wash the garden egg, native pepper and ewedu leaves and wrap each in the broad leaves.

Boil 1 ½ Iitres of water. Add the wrapped vegetables and boil for about 10 minutes.

Remove the vegetables from the boiling water. Mash the garden egg, pepper and chop the ewedu very finely.

Heat the palm oil for few minutes. Add the washed shawa and fry for few minutes. Add the mashed vegetables, maggi cubes and the ewedu.

Stir thoroughly and add salt to taste. Simmer for few minutes.

Remove from heat and serve with boiled yam or steamed ground beans.
