OBE EFFIRIN

Recipe for four servings

REQUIREMENTS

- 1 kg Beef
- 3 medium cow skin (kpomo)
- 1 medium size Smoked fish
- 1 medium bunch effirin leaves
- 1 tablespoon dry pepper (ground)
- 2 tablespoons crayfish (ground)
- 2 medium size Onion (ground)
- 1 cup Egusi (ground)
- 2 Maggi cubes
- 1 small wrap Iru
- 3 cookingspoon palm oil
- Salt to taste.



What you do

Wash and season the meat and cow skin with Onion, Maggi cubes, salt and pepper then steam till soft.

Pick, wash, cut the effirin leaves and blend to a smooth paste using a blender.

Wash and de-bone the fish.Mix the egusi with onion into a smooth paste.

Heat the palm oil, add onion,cut egusi into balls and add to the oil.Fry for about 5-10 minutes.After frying, pour the blended effirin leaves and add dry peper into the pot and stir.

Cover pot and allow simmering for about 10minutes.

Pour the cooked meat stock and add smoked fish, iru, maggi cubes, crayfish and add salt to taste.Simmer for about 2 minutes.

Remove from heat and serve with eba or pounded yam.
