SOY & MUSHROOM SALAD
Recipe for six servings
REQUIREMENTS
2 cups soybeans, soaked
20 ml oil
2 tablespoons lemon juice
1 clove garlic, crushed
Pinch salt to taste
1 teaspoon pepper
4 stalks celery, chopped
1 cup mushrooms, sliced
4 scallions, finely chopped (if available)
What you do
Cook the beans and drain well.
Mix together the oil, lemon juice, garlic, salt and pepper.
Toss the beans and vegetables in the dressing.
Serve chilled.
