SOYBEAN MILK
Recipe for four servings

REQUIREMENTS

2 cups dried soybeans
2 beakers water
1 ginger root, grounded
Cup sugar

What you do

Soak beans overnight in water. Drain, rinse, and discard water. Combine soaked beans with 2 quarts fresh water. In a food processor or blender, process beans with water until smooth.

Strain into a pot through a double layer of a fine sieve.

Add ginger, and sugar to taste.

Boil soymilk for 20 minutes.

Stir frequently to prevent skin from forming.

Remove ginger, then flavour with vanilla.

Stir in sugar to taste.

Cool to room temperature, then refrigerate.
