Soybean Vanilla Pudding

SOYBEAN VANILLA PUDDING
Recipe for six servings

REQUIREMENTS

Cup sugar
3 tablespoons cornstarch
Teaspoon salt
3 cups soymilk
2 teaspoons vanilla

What you do

Mix the sugar, cornstarch and salt in a large saucepan.

Gradually blend in the soymilk, stir constantly to avoid lumps.

Cook the mixture over low heat, stirring constantly until thickened. Cook for an additional 3 to 5 minutes, stirring now and then.

Remove the pudding from the heat and add the vanilla.

Leave to cool for 5 to10 minutes, stir now continuously then , pour pudding into a large serving dish or individual serving dishes and chill until firm, about 45-1hr 30minutes.
