SWEET & SOUR PORK & TOFU
Recipe for three servings

REQUIREMENTS

2 cups pineapple chunks,
3 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon cornstarch
2 tablespoons soybean oil, divided
25g lean pork loin, thinly sliced
14 ounces extra firm tofu, drained and cut into 1/2 -inch cubes (if available in the local market)
4 cups broccoli florets, cut into -inch pieces
3 red bell pepper, cut into 1-inch strips

What you do

Drain pineapple, reserving juice. Mix pineapple juice, ketchup, vinegar, soy sauce and corn-starch in small bowl; set aside. Heat 1teaspoon oil in large non-stick frying pan over medium high heat. Add pork, stirring constantly, for 2 minutes until cooked through, remove from pan. Add 2 teaspoons oil to pan. Add tofu and cook, stirring occasionally, for 5 minutes until lightly browned, remove from pan.

Add remaining oil, broccoli and peppers to pan. Cook, stirring constantly, until just tender. Pour pineapple juice mixture into pan. Cook, stirring constantly, for 1 minute until mixture begins to thicken slightly. Add tofu, pork and pineapple. Cook until heated through.
