WATERMELON CHUTNEY
Recipe for four servings

REQUIREMENTS

4 cups watermelon, remove seeds and rind
1cup Balsamic vinegar
1 cup of water
Cup sugar
Cup fresh ginger, minced and peeled
2 tablespoons cayenne peppers, minced with seeds
1 tablespoons garlic minced
1teaspoon salt
Teaspoon black peppercorns, crushed

What you do

Preheat oven to 175 degrees C. Lightly grease a 9 x 5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together butter and brown sugar. Stir in eggs and mashed bananas. Blend until well blended. Stir banana mixture into flour mixture; stir continuously until meal becomes moistened. Pour batter into prepared loaf pan. Bake in preheated oven for 1hour-1hour 30 minutes, until a toothpick inserted into centre of the loaf comes out clean. Let bread cool in pan for 10 minutes, then spread out on a wire rack.
