
YAM POTTTAGE
Recipe for four servings
REQUIREMENTS
- 1 medium tuber Yam
- 1 cooking spoon ground crayfish
- 1 medium size Fish
- 6 Tomatoes (ground)
- 3 Peppers (ground)
- 1 medium Onion
- 2 Maggi cubes
- 2 cooking spoons Palm Oil
- 4 cups water
- 1 small bunch of Spinach (optional)
- Salt
What you do
Peel the yam, wash and cut into small pieces. Place in a pot, add water and cook for 10minutes or when it starts boiling, then add salt. cook till yam is almost soft
Heat the palm oil, fry the chopped onion, the ground pepper and tomatoes
Fry for a few minutes, stir, add the fish and 2 seasoning cubes and then the shredded spinach(if desired) stir
Pour the fried mixture into the pot containing the boiled yam, add the ground crayfish Taste for salt, stir and let it simmer for 2 minutes or until the mixture thickens and some of the yam cubes breaks to turn into porridge. Remove from heat and serve.
